The refrigerator is a 12V compressor unit rather than a propane absorption fridge, which is why the battery bank is sized the way it is. It runs off the batteries including while towing and doesn't need the trailer leveled to work.

This is a 12V DC system with no inverter, which is the normal setup for a trailer this size. Off hookups you'll run the refrigerator, lights, water pump, furnace blower, and MaxxFan. Microwave and A/C need shore power or a generator.

The portable panels are more flexible than roof-mounted you can park the trailer in shade and put the panels in the sun, and they store inside out of the weather.

Realistically: in decent sun the panels keep up with daily use. Through a stretch of heavy overcast you'll want to top off with a generator or shore power. That's normal for a lead-acid bank this size, and there's room to grow the system if a future owner wants to go further.
